PASTA KITS

WHOLE GRAIN PASTAS

Ingredients: rye, emmer, wheat berry, AP flour, water, semolina

Allergens: gluten

Cooking Instructions: Store in freezer, boil for 4 minutes, strain, toss with sauce.


BEEF & RICOTTA MEATBALLS

Ingredients: grass-fed beef, ricotta, egg, parm, salt, pepper, nutmeg

Allergens: dairy, egg

Heating Instructions: Slowly heat in covered saucepan until meatballs are heated through, adding water as necessary. Toss with pasta and top with cheese.


PORK RAGU

Ingredients: pork shoulder, soffritto, tomato paste, garlic, red wine, Hearth broth, rosemary

Allergens: alcohol, nightshade, allium

Heating Instructions: Heat a little pasta water (or Hearth broth, if you happen to have some on hand) in a skillet, add pork ragu, and stir over medium heat until hot. Toss with pasta and top with cheese.


BASIL PESTO

Ingredients: basil, parsley, pistachio, parm, EVOO, raw garlic, black pepper

Allergens: dairy, nut, allium

Heating Instructions: Heat a little pasta water in a skillet, add pesto, and stir over medium heat until hot. Toss with pasta and top with cheese.


POMODORO

Ingredients: tomato, basil, oregano, garlic, EVOO

Allergens: nightshade, allium

Heating Instructions: Heat a little pasta water in a skillet, add pomodoro, and stir over medium heat until hot. Toss with pasta and top with cheese.


GRATED CHEESE

Ingredients: aged parm (pasteurized cow’s milk)

Allergens: dairy

Heating Instructions: Heat in saucepan on stovetop, adding water as necessary.


RIBOLLITA SOUP

Ingredients: carrot, onion, celery, savoy cabbage, tuscan kale, tomato paste, cranberry beans, thyme, salt, EVOO, black pepper

BORLOTTI BEAN & FARRO SOUP

Ingredients: EVOO, garlic, sage, onion, celery, carrot, tomato paste, borlotti beans, salt, farro, black pepper

CECI BEAN SOUP

Ingredients: coconut oil, onion, carrot, turmeric, ginger, coriander, fenugreek, cinnamon, bay leaf, garlic, black pepper, ghee, coconut milk, chickpeas, spinach, salt, EVOO

CHICKARINA SOUP

Ingredients: Base - garlic, EVOO, onion, celery, carrot, escarole, chicken broth, thyme; Chicken Meatballs - chicken thigh, egg, heavy cream, salt, parm, nutmeg, black pepper

BEEF & BROCCOLI SOUP

Ingredients: beef shank, scallion, ginger, garlic, onion, shiitake mushrooms, kelp, beef broth, broccoli, salt, EVOO, black pepper

FRENCH BREAD PIZZA

Heating Instructions: Pre-heat oven to 425 degrees. Remove French Bread Pizza from tin, and place directly on oven rack or baking sheet. Bake for 15 minutes.


MARGHERITA FRENCH BREAD PIZZA

Ingredients: imported tomatoes, dried Sicilian oregano, fresh garlic, fresh basil, EVOO, onion, mozzarella, She Wolf organic baguette

SAUSAGE & ONION FRENCH BREAD PIZZA

Ingredients: imported tomatoes, dried Sicilian oregano, fresh garlic, fresh basil, EVOO, onion, mozzarella, caramelized onion, house-made sausage (pork shoulder, fresh sage, fresh garlic, toasted fennel seeds, kosher salt), She Wolf organic baguette

LASAGNA VERDE BOLOGNESE

Ingredients: egg, spinach, AP flour, semolina flour, grass-fed beef, pork, carrot, onion, celery, tomato, tomato paste, EVOO, red wine, Hearth broth, milk, salt, black pepper, nutmeg, butter, parm

Heating Instructions: FROM THAWED - Remove lid from tray, cover tray with aluminum foil, heat in oven at 375 degrees for 30 minutes. Remove aluminum foil for the last 10 minutes of cooking time. FROM FROZEN - Remove lid from tray, cover tray with aluminum foil, heat in oven at 375 degrees for 1 hour. Remove aluminum foil for the last 10 minutes of cooking time.

Heating Instructions: FROM THAWED (RECOMMENDED) - Remove lid from tray, cover tray with aluminum foil, heat in oven at 375 degrees for 25 minutes. FROM FROZEN - Remove lid from tray, cover tray with aluminum foil, heat in oven at 375 degrees for 35-45 minutes.


ROSEMARY SHRIMP WITH CHICKPEAS, LEMON RISOTTO, BROCCOLI, CAULIFLOWER, & CAPERS

Ingredients: 4 large shrimp, chickpeas, Arborio rice, broccoli, cauliflower, onion, parsley, capers, garlic, lemon, tomato paste, rosemary, white wine, vegetable stock, EVOO, salt, black pepper

Allergens: shellfish, alcohol, nightshade, allium


ROASTED SALMON WITH SALSA VERDE, LEMON RISOTTO, BROCCOLI, CAULIFLOWER & CAPERS

Ingredients: 4oz salmon, Arborio rice, broccoli, cauliflower, onion, parsley, capers, garlic, white wine, vegetable broth, EVOO, lemon, salt, black pepper

Allergens: alcohol, allium, fin fish


BRAISED CHICKEN THIGH WITH MUSHROOMS, CHEESY POLENTA*, BROCCOLI RABE

Ingredients: 6oz Joyce Farms boneless chicken thigh, broccoli rabe, cremini mushrooms, polenta, parm, pecorino, butter, carrot, celery, onion, tomato, white wine, Hearth broth, rosemary, sage, garlic, EVOO, salt, black pepper

Allergens: dairy, alcohol, nightshade, allium

*polenta may contain trace amount of gluten, as it is milled in-house in our stone grain mill, which does see glutenous items, as well; this machine is cleaned between runs, but there is the potential for cross-contamination for Celiac guests

Ingredients: Green Circle chicken breast, bread crumbs, whole grain pasta, tomato, onion, garlic, oregano, basil, parm, mozzarella, flour, egg, parsley, ricotta, broccoli rabe, salt, black pepper, EVOO

Allergens: gluten, dairy, egg, nightshade, allium

Ingredients: 6oz beef shoulder, carrot, potato, parsnip, turnip, brussels sprouts, polenta, beef broth, onion, garlic, red wine, tomato paste, parm, pecorino, butter, EVOO, salt, black pepper

BUTTERMILK CHICKEN FINGERS, MAC N' CHEESE, HONEY-GLAZED CARROTS

Ingredients: 5oz Green Circle chicken breast, buttermilk, onion powder, garlic powder, flour, carrot, butter, raw honey, whole grain pasta, parm, white cheddar, bread crumbs, thyme, salt, black pepper, EVOO

Allergens: gluten, dairy, alcohol, nightshade, allium

READY-TO-BAKE COOKIE DOUGH

CHOCOLATE CHIP COOKIE DOUGH

Ingredients: flour, baking soda, salt, dark brown sugar, molasses, sugar, bittersweet chocolate, butter, eggs, vanilla bean

Allergens: gluten, dairy, egg

Baking Instructions: Slice into ¾ inch slices. Space an inch apart on a foil or parchment-lined tray, and bake at 350 degrees for 10-12 minutes, or until golden brown on the edges, and slightly puffed in the center.


OATMEAL RAISIN COOKIE DOUGH

Ingredients: butter, brown sugar, eggs, vanilla bean, flour, baking soda, cinnamon, salt, oats, raisins

Allergens: gluten, dairy, egg

Baking Instructions: Slice into ¾ inch slices. Space an inch apart on a foil or parchment-lined tray, and bake at 350 degrees for 11-13 minutes, or until golden brown on the edges, and slightly puffed in the center.


GINGER MOLASSES COOKIE DOUGH

Ingredients: flour, brown sugar, sugar, molasses, apple cider vinegar, ginger, allspice, cardamom, cinnamon, egg, baking soda, salt, butter

Allergens: gluten, dairy, egg

Baking Instructions: Slice into ¾ inch slices. Space an inch apart on a foil or parchment-lined tray, and bake at 350 degrees for 10-12 minutes, or until golden brown on the edges, and slightly puffed in the center.
