THANKSGIVING DINNER FROM HEARTH FOR HOME*

AUTUMN SQUASH SOUP WITH PEPITAS & TOASTED HAZELNUTS (the full festive feast only)

Ingredients: SOUP - market squash, onion, ginger, brown sugar, EVOO, cinnamon, cardamom, nutmeg, clove, orange juice GARNISHES - 1) Greek yogurt 2) spiced pumpkin seeds & hazelnuts (cinnamon, nutmeg, clove, black pepper, sugar in the raw, salt)

Allergens: dairy, nut, allium, seed

We can prepare this without dairy, and/or nut & seed.

Heating Instructions: Heat soup in a sauce pot over medium-low heat, stirring occasionally until it reaches a gentle simmer, 10-20 minutes. Garnish with pepitas, hazelnuts, and yogurt.


ROASTED TURKEY BREAST, BRAISED LEG & THIGH

Ingredients: BREAST - turkey breast, EVOO, sage DARK MEAT - turkey leg, turkey thigh, red wine, turkey stock (turkey, onion, carrot, celery, black peppercorn, bay leaf, tomato paste)

Allergens: alcohol (cooked off), nightshade, allium

Heating Instructions (with stuffing and vegetables): Pre-heat oven to 350 degrees.  Put turkey, stuffing, and vegetables in oven with cover, and cook for 20-30 minutes, or until hot all the way through. (The foil/paper lid on aluminum trays is safe in the oven at 350.)


TRADITIONAL BREAD STUFFING

Ingredients: sourdough bread, leeks, onion, cremini mushrooms, sage, turkey stock (turkey, onion, carrot, celery, black peppercorn, bay leaf, tomato paste), parm, butter, lemon zest, parsley

Allergens: gluten, dairy, nightshade, allium

Heating Instructions (with turkey and vegetables): Pre-heat oven to 350 degrees.  Put turkey, stuffing, and vegetables in oven with cover, and cook for 20-30 minutes, or until hot all the way through. (The foil/paper lid on aluminum trays is safe in the oven at 350.)


YUKON GOLD MASHED POTATOES

Ingredients: yukon gold potato, butter, cream, salt

Allergens: dairy, nightshade

Heating Instructions: Heat potatoes in a sauce pot over medium-low heat, stirring occasionally until hot, approximately 10-20 minutes.


ROASTED GREENMARKET VEGETABLES WITH HONEY & THYME (the full festive feast only)

Ingredients: TBD greenmarket vegetables, EVOO, thyme, buckwheat honey, butter

Allergens: dairy, TBD

Heating Instructions (with turkey and stuffing): Pre-heat oven to 350 degrees.  Put turkey, stuffing, and vegetables in oven with cover, and cook for 20-30 minutes, or until hot all the way through. 


CRANBERRY SAUCE

Ingredients: cranberries, sugar, orange, cinnamon, clove


CLASSIC BROWN GRAVY

Ingredients: turkey stock (turkey, onion, carrot, celery, black peppercorn, bay leaf, tomato paste), butter, flour

Allergens: gluten, dairy, nightshade, allium

Heating Instructions: Heat gravy in a sauce pot over medium-low heat, stirring occasionally until hot, 10-15 minutes.


PUMPKIN PIE (a choice for the full festive feast only)

Ingredients: CUSTARD - pumpkin, egg, brown sugar, evaporated milk, cornstarch, nutmeg, cinnamon, cloves, vanilla DOUGH - flour, butter, water, sugar, cream, vinegar, salt, baking powder PUMPKIN SEED BRITTLE - pumpkin seeds, orange zest, brown sugar, butter, baking soda, salt, agave

Allergens: gluten, dairy, egg, seed


APPLE CRISP ( a choice for the full festive feast only)

Ingredients: APPLE COMPOTE - apples, sugar, brown sugar, cornstarch, sherry vinegar, lemon juice, apple cider TOPPING - brown sugar, butter, buckwheat flour, oats, salt, cinnamon, vanilla

Allergens: dairy

Heating Instructions: Pre-heat oven to 350 degrees.  Put apple crisp in oven covered with foil 10-15 minutes, or until hot all the way through. Remove foil and bake for 5 more minutes to allow topping to crisp.


*shorter heating times for 1-4 people, longer heating times for 5-8 people

PASTA KITS

WHOLE GRAIN PASTAS

Ingredients: rye, emmer, wheat berry, AP flour, water, semolina

Allergens: gluten

Cooking Instructions: Store in freezer, boil for 4 minutes, strain, toss with sauce.


BEEF & RICOTTA MEATBALLS

Ingredients: grass-fed beef, ricotta, egg, parm, salt, pepper, nutmeg

Allergens: dairy, egg

Cooking Instructions: Slowly heat in covered saucepan until meatballs are heated through, adding water as necessary. Toss with pasta and top with cheese.


PORK RAGU

Ingredients: pork shoulder, soffritto, tomato paste, garlic, red wine, Hearth broth, rosemary

Allergens: alcohol, nightshade, allium

Cooking Instructions: Heat a little pasta water (or Hearth broth, if you happen to have some on hand) in a skillet, add pork ragu, and stir over medium heat until hot. Toss with pasta and top with cheese.


BASIL PESTO

Ingredients: basil, parsley, pistachio, parm, EVOO, raw garlic, black pepper

Allergens: dairy, nut, allium

Cooking Instructions: Heat a little pasta water in a skillet, add pesto, and stir over medium heat until hot. Toss with pasta and top with cheese.


POMODORO

Ingredients: tomato, basil, oregano, garlic, EVOO

Allergens: nightshade, allium

Cooking Instructions: Heat a little pasta water in a skillet, add pomodoro, and stir over medium heat until hot. Toss with pasta and top with cheese.


GRATED CHEESE

Ingredients: aged parm (pasteurized cow’s milk)

Allergens: dairy

READY-TO-BAKE COOKIE DOUGHS

CHOCOLATE CHIP COOKIE DOUGH

Ingredients: flour, baking soda, salt, dark brown sugar, molasses, sugar, bittersweet chocolate, butter, eggs, vanilla bean

Allergens: gluten, dairy, egg

Baking Instructions: Slice into ¾ inch slices. Space an inch apart on a foil or parchment-lined tray, and bake at 350 degrees for 10-12 minutes, or until golden brown on the edges, and slightly puffed in the center.


OATMEAL RAISIN COOKIE DOUGH

Ingredients: butter, brown sugar, eggs, vanilla bean, flour, baking soda, cinnamon, salt, oats, raisins

Allergens: gluten, dairy, egg

Baking Instructions: Slice into ¾ inch slices. Space an inch apart on a foil or parchment-lined tray, and bake at 350 degrees for 11-13 minutes, or until golden brown on the edges, and slightly puffed in the center.


GINGER MOLASSES COOKIE DOUGH

Ingredients: flour, brown sugar, sugar, molasses, apple cider vinegar, ginger, allspice, cardamom, cinnamon, egg, baking soda, salt, butter

Allergens: gluten, dairy, egg

Baking Instructions: Slice into ¾ inch slices. Space an inch apart on a foil or parchment-lined tray, and bake at 350 degrees for 10-12 minutes, or until golden brown on the edges, and slightly puffed in the center.
